Queso Guayanés Vegan (Guayavegan)

Another Venezuelan Fresh Cheese, our Vegan Version

”El Guayavegan”

Ingredients:

·       90 gr. cashews
·       10 gr. almonds

·       ¾ cup rice milk (180 ml.)
·       4.3 gr. lactic acid
·       11 gr. Salt
·       0.5 gr. nutritional yeast
·       8 gr. tapioca starch
·       10 gr. coconut oil
·       5 gr. Margarine
·       ¾ tsp. maple

·       ¾ cup water
·       9 gr. agar agar (11 gr. If thai agar is used)

Instructions:

Day 1:
·       Soak raw cashews and almonds in lukewarm water for about 8-12 hours.

Day 2:
·       Wash the cashews and almonds well with cold water.

·       Mix the agar agar and the cup of water in a small saucepan.
·       Cover with a lid and bring to a boil. Simmer for 3 to 4 minutes.

·       Put all ingredients in a blender, and blend for 1-2 mins.

·       Pour in the saucepan the cheese mixture and mix well. Continue cooking over medium heat, stirring with a silicon or wooden spoon, until the mixture is smooth and stretchy.

·       Put the cheese in a container with a bit of rice milk, and let it cool for 30 mins. Put the container in the fridge.

Perfect for arepas & cachapas and completely cruelty-free!
