Queso Paisa/Palmita Vegan (Palmivegan)

”El Palmivegan”

(Fresh Vegan Venezuelan Cheese Recipe)

Ingredients:

·       90 gr. cashews
·       10 gr. almonds

·       350 ml rice milk
·       3 gr. lactic acid
·       12 gr. Salt
·       10 gr. kappa carrageenan
·       0.5 gr. nutritional yeast
·       8 gr. tapioca starch
·       10 gr. coconut oil
·       5 gr. Margarine
·       ¾ tsp. maple

Instructions:

Day 1:
·       Soak raw cashews and almonds in lukewarm water for about 8-12 hours.

Day 2:
·       Wash the cashews and almonds well with cold water.

·       Put all ingredients in a blender, and blend for 1-2 mins.

·       Pour in the saucepan the cheese mixture and mix well. Continue cooking over medium heat, stirring with a silicon or wooden spoon, until the mixture is smooth and stretchy.

·       Put the cheese in a container, and let it cool for 30 mins. Put the container in the fridge.

Use it to make sandwiches, pizzas, or anything you feel like!
