Pancakes!! (Gluten-free and Vegan, of course)

For 4-5 medium pancakes.

Gluten-free flour mix:

- 1/2 cup rice flour
- 1/2 cup gluten-free rolled oats
- 2 tbsp coconut or almond flour
- 1 tbsp cassava flour (starch)
- 1 tbsp baking powder

Rest of ingredients:

- 1 cup plant milk
- 1/4 cup unsweetened applesauce or 1 banana
- 1 tbsp ground flaxseed or chia seeds.
- 2 tbsp coconut sugar
- Pinch of salt
- Pinch of vanilla sugar (optional)
- Pinch of cinnamon
- 1 tbsp vanilla

Mix everything in a blender. Pour a small amount of the mix into a heated and greased pan and cook at medium heat for a few minutes on each side. Enjoy them with your favorite toppings!
