Picky Eater's Chickpea Nuggets
Makes about 24-26 nuggets
Ingredients:
400 gr cooked chickpeas, rinsed and drained (white beans work also)
2 carrots, peeled
Salt
Herbs mix
Dried garlic
About 1 cup Corn flour (Harina pan) (divided into halves)
About ½ cup gluten-free bread crumbs
Optional: 1 tbsp nutritional yeast
Directions:
Process the chickpeas, and add to a bowl. Process the carrots, and add to the bowl with chickpeas. Add herbs, salt, and garlic to your taste, add ½ cup corn flour, and mix well until achieving a cookie dough consistency (sometimes the beans or chickpeas have more or less water so adjust the corn flour amount if needed).
In a bowl or dish combine the other half of corn flour with the bread crumbs, the nutritional yeast if using, and mix well. Form small nuggets with the dough, cover with crumbs, and flour mix. Freeze or cook. I like cooking them in our air fryer (from frozen) for 10 min 180°C, but you can also fry them or put them in the oven for about 10-15 min.
