Sneaky Delicious Chickpea Brownie
This is a favorite in our home and it's a great way to add legumes to the picky ones diet XD...
Ingredients:
1 can of chickpeas rinsed and drained (about 400gr)
3 tbsp gf rolled oats
3 tbsp almond flour
4 tbsp of cocoa
1 tbsp baking powder
1/4 tsp baking soda
6 tbsp plant milk
3/4 cup coconut sugar
1 tbsp vanilla
Dark chocolate chips and chunks
4 tablespoons peanut butter (optional)
Pinch of cinnamon (optional)
chopped walnuts and/or hazelnuts (optional)
Directions:
Preheat oven to 350ºF / 180ºC
Grease and flour a 20x20 cm mold.
Process the oats and set aside. Blend chickpeas with a bit of plant milk and the vanilla in a food processor. In a large measuring cup, blend the flours (oats, almond) with the cocoa powder, the coconut sugar, the baking powder and baking soda. Transfer chickpea mix to a bowl. Gradually add the flour mix to the chickpea mix, blending in with a spatula, alternating with the plant milk. Transfer to the mold, add chocolate chips, peanut butter and nuts on top. Bake for about 25/30 min or until a wooden stick comes out dry.
Let cool before serving.
For a more fudgy version: add the chickpea water and about 3 more tablespoons of oat or almond flour.
Store it in the fridge.
