Zucchini-Carrot Fritters
1 big zucchini
1 big carrot
5 tbsp Polenta
3 tbsp Gf Oat flour
3 tbsp Rice flour
4 tsp ground flax seeds
½ glass of water
Onion powder
- Herbs
- Salt
Pepper
Olive oil (for greasing pan)
Directions:
Add ground flax seeds to the ½ glass of water, and set aside (this makes 2 “flax eggs”). Grate zucchini and carrot, and add to a bowl. Gradually add polenta, oat, and rice flours to the bowl, alternating with the flax “egg”, adjust the amount of flours if needed until you get a consistent dough. Add onion powder, herbs, salt, and pepper to your taste. Heat a pan (or budare) with a little bit of olive oil. Form round (or square, or star-shaped, or whatever shaped patties) and cook them in the pan, at medium heat, turning them when they are golden brown. Serve and enjoy!
Tip: mine tasted great with a vegan mayo/mustard sauce 👌🏻
