Chickpea Veggie Fritters

 Ingredients:

  • 500gr chickpea flour
  • 500ml filtered water
  • 1 small zucchini
  • 1 small carrot
  • 1 small sweet potato
  • A bunch of spinach
  • 1 tsp nutritional yeast
  • 1 tsp Salt
  • 1 tbsp Soy sauce (I used a gluten-free one)
  • Parsley
  • Dill
  • Garlic
  • Onion powder
  • Paprika
  • Pepper
  • Olive oil (a couple of tbsp for cooking)

Directions:

Grate all veggies, chop spinach, removing stems. Smash and chop garlic in tiny pieces. 

Mix all veggies in a bowl with spinach, garlic, dill, and parsley.

Heat a bit of olive oil in a non-stick pan at medium heat.

In another bowl mix the chickpea flour, add the nutritional yeast, salt, onion powder, paprika, and pepper. Mix well and then gradually add water while mixing, when the mix looks homogeneous, let it sit while you add the veggie mix to the heated pan, stir fry for a couple of minutes for veggies to soften a little bit, and put them back in the bowl. Add the chickpea mix to the bowl with the veggies, add soy sauce, and adjust salt and spices to the taste. Clean the pan or use another non-stick or crepe pan and heat a bit of oil at medium heat. Use a large spoon to scoop a bit of the mix and pour into the heated pan, add as many as fit (you can adjust the size to your preference). Let the fritters cook for a couple of minutes and flip them to cook the other side until each side is golden brown. Repeat until you use up all the mix. 

I served them with basmati rice and it fits nicely! You can also add some soy sauce to the fritters when serving. Enjoy!
