Vegan Ponche Crema

This one's my husband's creation. He had been making the non-vegan one for years and we kinda missed it so he decided to make a vegan version. We agree that it tastes better than the non-vegan one and also that it sits much nicer in the belly XD. So here it is!

Recipe for 1 liter

Flan:

Heat in a pot:
  • 500 ml vanilla soy milk
  • 6 tablespoons sugar
  • Pinch of salt
  • 1 yellow lemon peel
  • ½ level teaspoon of cinnamon
Mix cold and add to the pot when the liquid is hot:
  • 300 ml vanilla soy milk + 6 tablespoons cornstarch
Punch:
  • 90 ml. rum (more or less, it depends on how strong you want it)
  • 100 ml. almond milk
Prepare the flan, once it thickens, pour it into a heat-resistant bowl, put the bowl in a bigger bowl with ice-cold water, and wait 1-2 hours for it to set a little.

In a blender, mix the flan with the rum and almond milk for 1 minute.

Put the ponche crema in a bottle and chill in the fridge for a day before serving.
