Pancakes 2.0
Makes approx. 6 medium pancakes.
Gluten-free flour mix:
(I mix these in a cup before adding to the rest of the ingredients in the blender)
- 1/2 cup rice flour
- 1/2 cup gluten-free oat flour
- 3 tbsp coconut flour
- 3 tbsp almond flour
- 1 tbsp cassava flour (starch)
- 1 tbsp baking powder
Rest of the ingredients:
- 1 1/2 cup plant milk
- 1 tbsp ground flaxseed or chia seeds. (Sometimes I mix both)
- 2 tbsp coconut sugar
- Pinch of salt
- 1 tbsp vanilla
- Pinch of vanilla sugar (optional)
- Pinch of cardamom powder (optional)
- Pinch of cinnamon (optional)
Directions:
Mix everything in a blender. Let the mix sit for a moment while heating the pan. Pour a small amount of the mix into a heated and greased pan and cook at medium heat for a few minutes on each side.
