Marbled White Beans Brownie

Ingredients:

  • 500g drained cooked white beans

  • ½ cup rolled oats

  • ¼ cup cornstarch

  • ¼ cup rice flour

  • ¼ cup almond flour

  • 4 tbsp of cacao powder

  • 2 tbsp ground flaxseeds

  • 2 tbsp baking powder

  • ½ tsp baking soda

  • ½ cup plant milk (a bit more if needed)

  • 1 cup coconut sugar

  • ½ cup agave syrup

  • 1 tbsp vanilla

  • Dark chocolate chips and chunks (plenty)

  • 2 Pinches of salt (one for each flavor)

  • Pinch of cinnamon


Directions:

 

Preheat oven to 350ºF / 180ºC


Grease and flour a 20x20 cm mold.


For the vanilla part:

In a food processor, blend half the beans (250g) with half of the oats (¼ cup), half the flours, half the corn starch, half baking powder, half baking soda, half plant milk, half coconut sugar, half agave, half flaxseeds, and add vanilla and a pinch of salt, pour a little more plant milk if needed to blend everything well. Pour in a bowl and blend in some of the chocolate chips and chunks.


For the chocolate part:

Blend the rest of the beans with the cacao powder, and add the remaining oats, flours, corn starch, baking powder, baking soda, flax seeds, coconut sugar, agave, plant milk, a pinch of salt, and cinnamon in the food processor. Same as before, add a little bit more plant milk if needed. When the dough looks well blended, add some chocolate chips and chunks (leaving some for the top).


Pour the mixes slowly inside the mold alternating them and using a spatula for help, mixing them just a bit to get a marbled effect. Add some chocolate chips on top.


Bake for about 35/40 min or until a wooden stick comes out dry.


Let cool before serving.


Keep it in the fridge.





Serving Suggestion: (with some based vanilla icecream 👌🏻).
