Godmother's Veganized Apple Cake

This has always been one of my family's favorites. My mom used to bake it a lot and I really missed it. 

I had some fresh and tasty fuji apples waiting and decided to ask my mom for the original recipe, veganized it, and made it gluten-free as well, of course. And here it is!

Ingredients:

  • 1/2 cup of chopped nuts (I used walnuts and pecans)
  • 2 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 cup coconut sugar
  • 1 bar margarine or vegan butter (about 1/2 cup)
  • 2 vegan flax "eggs" (100 ml soy milk + 2 tbsp ground flaxseeds)
  • 1 tsp vanilla
  • 1 cup soy milk with a tbsp of lemon juice
  • 2 cups of gluten-free flour mix (I used a mix of cornstarch, oat flour, and rice flour)
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 2 peeled apples chopped into fine slices
  • Optional: a pinch of cardamom 
Directions:

Mix together the chopped nuts, cinnamon, and brown sugar, and set aside.
Mix the vegan flax eggs and set aside. Mix the flours, baking powder, and baking soda together, cardamom if using, and set aside.

Blend margarine until creamy and add coconut sugar, blend well, and add the vegan eggs and vanilla.
Gradually add the flour mixture alternating with the soy milk, and blend until smooth.
Prepare a round cake mold greasing and flouring it. Preheat the oven to 375 degrees F/190 degrees C.

Pour half the dough into the mold. Spread about 3 tbsp of the nut, sugar, and cinnamon mix on the dough, then arrange the apple slices in a flower pattern (see picture). Spread a bit more of the nut and sugar mix on the apples. Pour the rest of the dough over the apples, and finish spreading the rest of the nut and sugar mix on top. Bake for about 35/40 min.
