Black Beans Burgers
Another favorite one at home :)
Ingredients:
- 400 gr of cooked beans (any kind is fine)
- 3 garlic cloves (crushed)
- one small onion (finely chopped)
- 2 tbsp gluten-free oats
- 2 tbsp almond flour (ground almonds)
- 2 tbsp nutritional yeast
- 1 tbsp ground hemp seeds (or more flaxseeds)
- 2 tbsp ground flaxseeds
- About 4 tbsp gluten-free bread crumbs
- 1/4 tsp baking soda
- 2 tbsp. tamari sauce (or soy sauce)
- salt and pepper to taste
- spices and herbs to taste
- Water (just in case the dough needs some)
Directions:
In a food processor, blend beans (shortly, so that it has some texture. If the beans are soft enough you can mash them with a potato masher instead. Then put the mixture in a bowl, add the baking soda, salt, herbs, tamari sauce, garlic, onion, and pepper, finally add the seeds, nutritional yeast, oats, almond flour, and at the end, some bread crumbs (adjust the amount of bread crumbs if the mix is too humid or add very small amounts of water if it’s too dry), until the mixture has the consistency of arepa dough (firm enough to make patties). You can also add veggies to the mix. I sometimes add finely chopped mushrooms, zucchini, or grated carrots.
The burgers can be cooked on the grill, or in the oven (about 20 min each, flipping them at half the time) I haven't tried the air fryer but it probably works also, maybe it takes less time. If you decide not to cook all the burgers, they can be frozen and cooked later. It takes a little longer to cook them this way but that way they can last some time.
Serving suggestion: I like toasting some gluten-free burger bread or whole grain bread and serve with slices of tomato, onion, vegan cheese, salad, ketchup sauce, mustard, and vegan mayo.
