Crochette di Melanzane della Nonna

(Aubergine croquettes)


Ingredients:


  • 1 big aubergine

  • 1/2 cup of gluten-free oats

  • 1 flax “egg”: 2 tbsp ground chia or flaxseed in 1/4 cup of plant milk

  • 1 onion

  • 2 garlic cloves

  • vegan parmesan cheese and/or nutritional yeast

  • 1 ají dulce or 1/4 bell pepper

  • parsley or coriander

  • gluten-free breadcrumbs, Harina PAN, or yuca/cassava flour to cover the croquettes

  • salt and pepper to taste


Directions:


Mix the ground chia or flaxseeds with the plant milk and set aside. 


Boil some water in a pot. Peel and cut the aubergine, and cook the aubergine in the boiling water until it breaks apart like puré. Add to a bowl, add the oats, chia, or flax “eggs”. Finely chop all the veggies and herbs, and add them together with the vegan cheese or nutritional yeast, salt, pepper, and some harina PAN and breadcrumbs if the mix is too wet. Let it sit for a while so that the oats absorb the excess water. When the dough has a good consistency, form the croquettes and cover them in breadcrumbs. You can either bake the croquettes, fry them as shown below, or use the air fryer (10 min at 180º) or bake them until they are golden.
