Picky Eater Nuggets 2.0

Makes around 40 nuggets 

Ingredients

  • 3 garlic cloves
  • 1/2 zucchini
  • 1 carrot
  • 400 gr (drained) cooked small white beans
  • 3 tbsp nutritional yeast
  • 2 tbsp ground flax seeds
  • 1 tbsp vegan broth powder
  • 1/2 tbsp salt
  • 1 cup water (approx) 
  • 1/2 cup harina pan/white corn flour (approx)
  • 1/3 cup rolled oats
  • Gluten-free bread crumbs

Preparation

Chop the veggies and stir fry on a pan with a little oil. Wash and drain the cooked beans. Add the beans and veggies to a blender with nutritional yeast, flax seeds, veggie broth, salt, and water. Mix well, stopping the blender to push the veggies down, and add more water if needed. Pour the mix into a bowl. 

Gradually pour the flour and oats into the bowl stirring until the mix is well combined, add more flour and adjust salt if needed. Form the nuggets with your hands and cover with breadcrumbs. Add them to a freezer-proof container, between layers of waxed paper, and freeze. You can fry them, cook them in the air fryer, or use the grill, or oven. They are one of the best options to feed veggies to picky eaters like mine 😜!
