Mom's Spinach Muffins

Ingredients:


- 1 cup soy mince  

- 300 g spinach leaves  

- 1 zucchini  

- 2 stalks of spring onions  

- 1 leek  

- 3 garlic cloves  

- 1 red onion  

- 2 tbsp oat flour  

- 2 tbsp rice flour  

- 1/2 cup soy milk  

- Salt  

- Herbs (to taste)  

- Olive oil  


Directions:


Preheat the oven to 350º F (180º C).


Soak the soy mince in warm water.


In a small pan, heat a bit of olive oil and stir-fry the chopped onions and garlic. Gradually add the chopped vegetables: leek, spring onions, and zucchini. Cook until they soften, then set aside.


In another pan, cook the spinach until it softens. Remove from heat and let it cool before chopping it into smaller pieces. Set aside.


In a mixing bowl, combine the soy milk, oat flour, rice flour, salt, and herbs.


Add the cooked vegetables and the drained, softened soy mince to the bowl with the soy milk mixture. Stir until well combined.


Prepare a muffin mold by greasing it with oil and dusting it with flour. Spoon the mixture into each cup of the mold.


Bake for 15 minutes if using a fan oven or 25 minutes if using a conventional oven. Let cool before serving.

* If you don't have a muffin mold, you can use the same dough to make fritters in a pan.
