Easy Chocolate Pie

Ingredients:

Pie crust:

  • 100 gr almond flour
  • 50 gr hazelnut flour
  • 80 gr gluten-free oats
  • 60 gr nuts of choice (hazelnuts, etc.)
  • 1 tbsp coconut flour
  • ¼ cup agave or maple syrup (or half-and-half)
  • 2 tbsp sugar
  • 1 tbsp margarine
  • 1 tsp vanilla extract

Filling

  • 500 ml chocolate soy milk (alternatively, use soy milk and add cocoa powder, or melted chocolate)
  • 3 tbsp brown sugar
  • Pinch of salt
  • ½ tsp cinnamon
  • 250 ml vanilla soy milk (or simply use soy milk with a few vanilla drops)
  • 5 tbsp cornstarch
Preparation:

Preheat the oven to 180ºC (fan setting). In a food processor, blend the crust ingredients: flours, syrup, sugar, margarine, and vanilla until a dough forms. Press the dough into a mold and bake for about 10-15 minutes, or until it turns golden brown. Once baked, let the crust cool while you prepare the filling.

In a small jar, mix the cornstarch with the soy milk and set it aside. In a pot, add the remaining filling ingredients. Turn on the heat, and when the liquid is hot, incorporate the soy milk and cornstarch mixture. Stir continuously until the mixture becomes homogeneous and thickens. When it reaches a pudding-like consistency, turn off the heat and let it cool slightly.

Finally, pour the filling into the cooled crust and place it in the fridge overnight.
